February Healthy Highlights #2: Delicious Deviled Strawberries

Strawberries + Chocolate = The BEST Valentines Treat

LISA GRENTZ, MS, RDN, CD/LDN, FAND

One of the most popular food pairings for Valentine’s Day is chocolate and strawberries. Some might even say the rich chocolate and sweet fruit are a harmonious match made in heaven. That is because the sweetness and acidity of the strawberry pairs well with the bitterness of all types of chocolate.

Whether you like your berries dipped or drizzled in milk, dark, or white chocolate or layered between silky smooth chocolate mousse, here are some fun ways to enjoy the classic combination of chocolate and strawberries this month:

  • Chocolate covered strawberries

  • Sliced strawberries sprinkled with a dusting of grated dark chocolate

  • Strawberry truffle

  • Chocolate strawberry Greek yogurt bark

  • Strawberry chocolate galette

  • Chocolate mousse and strawberry parfait

  • Chocolate chip pancakes topped with fresh strawberries and a dollop of cream

  • Overnight chocolate strawberry oats

For our true strawberry and chocolate lovers looking for a new treat, next time you’re at the grocery store consider picking up a box of Clio Strawberry Greek Yogurt Bars. Deviled Strawberries

Yield: Approximately 40 strawberry halves

1-pint strawberries

½ cup heavy whipping cream

1 Tbsp. pure maple syrup

¼ tsp. vanilla extract

3.5-ounce bar of dark chocolate

Instructions:

Prepare the strawberries by cutting off the stem and slicing them in half lengthwise. Arrange strawberries cut side up on a plate or serving dish and set aside.

In a medium bowl, beat the heavy cream with an electric mixer until it begins to thicken. Add maple syrup and vanilla; beat until soft peaks form.

Spoon a dollop of whipped cream onto each strawberry half. Grate a little bit of the chocolate over the berries. Refrigerate until ready to serve.
